CHEDDAR CHESSE

&

RED BELL PEPER STRATA

Will serve 4 to 6 people

INGREDIENTS
butter at room temp
1 medium-size red bell pepper, thinly sliced
1 cup chopped green onions
1 cup chopped green onions
6 to 7 slices white bread (I prefer to use the Texas toast style)
5 slices white bread
1 cup ½ grated sharp cheddar cheese
2 cups of milk (½ cup of heavy cream, 1 cup ½ of evaporated milk)
3 large eggs
1 table spoon Dijon mustard
½ tsp salt
¼ tsp pepper
¼ tsp of Cumin

PREPARATION
Preheat oven to 350 F.  Melt 1 tablespoon ½ butter in skillet over medium-high heat. Add bell pepper and sautéed until just tender, about 3 minutes.  Add the green onions, sautéed 1 minute. Remove from heat.

Grease your Pyrex well.  Spread butter thinly on all surfaces of bread. Cut the bread in 1 inch squares. Layer half of bread in your baking dish. Cover with half of onions / red bell pepper mixture, then half of cheese. Repeat layering with bread, mixture and cheese.  Beat together milk, eggs, Dijon mustard, salt, pepper and cumin in mixing bowl. Pour over strata.  I always add a little bit more cheese on the top to have a nice brown top.
Bake strata until lightly browned on top and set in center, about 45 minutes. Let stand at least 10 minutes; cut into portions and serve.  (When the top has browned and I feel the middle not quite yet there, I cover the dish with some aluminum foil).

Alternatives to bell pepper:  mushrooms, asparagus tips, tomatoes, baby butter squash or what ever you prefer!
